Thanks for all the info and pics to help my decision. Thought I'd share a few photo's myself to show how I'll be setup for travelling Australia.
As you can see I had one small issue of the side bags sitting on my hard panniers which (hopefully) i've solved by slotting my sleeping bag between the backseat and the bottom of the bag.

Also seems to work fine with no sissy bar or hard panniers.

And may I ask where you got the pony bags? I can't find any without tassels and/or studs.
